Deglet Nour of Biskra-Algeria
Originally from Biksra, Algeria. The Deglet Nour date is the most popular variety for its superior quality and unique honey taste. It is traditionally called “finger of light” for its translucent color, the softness of its appearance, the elegance of its shape.
Our date is the fruit of male and female palms, both of genuine “Deglet Nour” variety. It is produced in the best soils of Tolga, Ourelal, Leghross, Bordj Ben Azouz (in Algeria), Wilaya of Biskra (at the heart of the desert).
The characteristic taste of this legendary soil which made its reputation. The cultivation of date in this region is a tradition of 14 centuries. Indeed, the micro climate (wet land and hot air) where it is produced gives it a typical composition (sugar, humidity, mineral and vitamin richness) and an authentic taste.Rich in carbohydrates and B vitamins, potassium and magnesium, dates are recommended for sports, especially long-term. Essentially insoluble fiber is effective against intestinal laziness. They are very well tolerated, especially the most fluffy varieties.
Deglet Nour, fingers of light
Originally From the region of Biskra, Algeria. It is here that Deglet Nour cultivates , the most prestigious of the dates in the world. It is also the most exported Algerian variety. Its name means “fingers of light” because it is almost translucent, revealing its nucleus. Even if it is endowed with exceptional qualities, the Algerian Deglet Nour is a capricious variety which requires a lot of care during its culture. There are a plenty of varieties of dates which are well-cultivated.
A giant herb
Deglet Nour is the name of a variety of dates. The Latin name of the date palm is Phoenix dactylifera, which means “the Phoenician tree with fruits like fingers”. The date tree is not a tree but a kind of giant herb of the monocotyledon family that reaches up to 20m height and can live hundred of years . Its trunk or stipe lengthens due to the activity of a terminal bud hidden in the heart of the palms. The stipe has no bark, it is simply covered by the base of the old fallen leaves. The roots are very deep to reach the water table.
The palm grove, a female territory
There are male palms and female palms, but it is impossible to distinguish them before flowering. These are the husks, brown envelopes that appear then under the palms, which characterize the sex of the palm tree. They are bulging in the male, long and thin in the female. A male tree can pollinate up to fifty females. Thus the palm grove is a predominantly female territory, each tree being able to produce each year 10 to 20 regimes in clusters and up to 100kg of dates provided to be well fertilized and irrigated. To multiply the plants, sowing is avoided because each kernel would give birth to a new variety. The young palm groves are created from a sort of cuttings by taking the suckers that grow at the base of a young female foot selected in the desired variety.
From green to golden yellow or amber
Contrary to popular belief, the date is a fresh product. It undergoes no drying process. After fertilization, the young fruit is green and round like a marble. During the summer, the date reaches its final size. It is then smooth and very yellow. Rich in vitamins, but very harsh to taste. It takes the heat of summer and often that of autumn so that it slowly matures on the tree. It softens and gets the blonde original coulor of Deglet Nour or amber, brown or black depending on the variety. The sugars it contains are transformed. Little by little, the date dries up and confit on the tree.

If the date is very rich in sugar, it is however medium in size and it is one of the fruits that provides the most fiber. It is found in all traditional dishes, such as couscous, and pastries and even in making and preparing sweets and chocolate.Very caloric, it is the ideal food of the physical effort. Its sweet and scented sap, rich in sugar and minerals, is a refreshing drink that recalls the flavor of coconut milk. its delecious honey is also a valuable elements which is full of natural pricless ingredients.

Recommendation
- Store in fridge at 3-5°C
- Remove from the fridge 1 hour before consumption for better taste
- If left outside fridge not above 20°C in dry place away from direct sunlight
- Soak in filtered or pure spring water for 15min or more for extra softness.
